1 (10oz) bag frozen broccoli rice* (about 2 cups)
2 cups freshly shredded cheddar cheese (not the pre-shredded)
1 large egg
2 tbsp almond flour
seasoning to taste (such as garlic salt)
Instructions
- Cook the broccoli rice per package directions. Drain and squeeze out excess liquid thoroughly; let cool.
- Preheat oven to 400°F. Line a large baking sheet with parchment paper.
- In a bowl, mix broccoli rice, cheese, egg, almond flour, and seasoning.
- Form mixture into about 16 small balls. Place on sheet and flatten slightly.
- Bake on center rack for 15 min until browning. Flip and bake another 8-10 min until crisp.
- Serve alone or with a low-carb dipping sauce.
Notes
- *Fresh broccoli can be riced and cooked instead. Ensure broccoli is very dry for crispier rounds.
- Store leftovers in an airtight container in the fridge. Reheat in oven/toaster oven to maintain crispness.
