Ingredients
2 large boneless skinless chicken breasts
2 tablespoons honey
Juice and zest of 2 limes
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large ripe mango, diced
1/4 cup red onion, finely chopped
1 small jalapeño, seeded and minced
2 tablespoons fresh cilantro, chopped
Juice of 1 additional lime
Salt and pepper to taste
Instructions
- Whisk honey, lime juice, zest, olive oil, garlic, cumin, paprika, salt, and pepper; marinate chicken for 30-60 minutes.
- In a separate bowl, toss diced mango, red onion, jalapeño, cilantro, and additional lime juice to create the salsa.
- Grill or pan-sear chicken over medium-high heat for 6-7 minutes per side until internal temperature hits 165 F.
- Let the chicken rest for 5 minutes, then slice and top generously with the mango salsa.
Notes
- For a spicier salsa, leave some jalapeño seeds in.
- Ensure the grill is hot before adding chicken to get the best sear.
