4 boneless skinless chicken breasts
3 tablespoons olive oil
2 tablespoons fresh lime juice
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
2 California avocados, sliced
1 cup cherry tomatoes, halved
1 cup shredded mozzarella cheese
Fresh chopped cilantro
Balsamic glaze for drizzling
1/4 cup diced red onion
Instructions
- In a small bowl, whisk together olive oil, lime juice, minced garlic, paprika, cumin, salt, and pepper.
- Place chicken breasts in a shallow dish or resealable bag and pour the marinade over them. Marinate for at least 15-30 minutes.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Grill the chicken for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C).
- During the last 2 minutes of grilling, sprinkle shredded mozzarella over each chicken breast and close the lid to melt.
- Remove chicken from the grill and top immediately with sliced avocados, cherry tomatoes, and diced red onion.
- Drizzle with balsamic glaze and garnish with fresh cilantro before serving.
