1 teaspoon salt

1/2 teaspoon ground cumin
1/2 teaspoon ground oregano
1/2 teaspoon red pepper flakes
1/4 cup fresh dill, chopped
1/4 cup fresh mint, chopped
1/4 cup finely diced red onion
4 cloves garlic, finely minced
1/2 teaspoon lemon zest
1 tablespoon olive oil, for baking
chopped romaine
feta, for serving
cucumber
tomato
white rice
tzatziki sauce

Instructions

  1. Preheat oven to 400°F. Line a baking sheet.
  2. In a large bowl, combine all meatball ingredients (chicken through lemon zest). Mix gently with hands.
  3. Form mixture into 1-inch meatballs (approx. 40) and place on baking sheet.
  4. Lightly brush with olive oil. Bake for 18-22 mins until internal temp reaches 165°F.
  5. Serve over chopped romaine with rice, cucumber, tomato, feta, and tzatziki.
