Instructions
- In a medium mixing bowl, combine the Greek yogurt, peanut butter, sweetener, and vanilla extract.
- Whisk the mixture vigorously until it is completely smooth and creamy.
- Gently fold in the chocolate chips if using.
- Line a mini muffin tin with silicone liners or lightly grease with coconut oil.
- Spoon the mixture evenly into the muffin cups, filling each about 3/4 full.
- Place the tray in the freezer for at least 4 hours, or until the bites are firm to the touch.
- Pop the bites out of the mold and serve immediately or store in the freezer.
Notes
- Use full-fat yogurt for a creamier texture.
- Let bites thaw for 2 minutes before eating for the best consistency.
