A high-protein, gluten-free bowl featuring roasted sweet potatoes, seasoned lean beef, and creamy cottage cheese finish with hot honey.

Ingredients

2 medium/large sweet potato (cubed)
2 teaspoon olive or avocado oil
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
1 pound lean ground beef (90/10)
23 Tablespoons taco seasoning
2 Tablespoons water (optional)
1 cup cottage cheese
1 avocado (chopped)
4 teaspoons hot honey
hot sauce to taste
pickled onions or jalapeños

Instructions

  1. Preheat the oven to 400’F.
  2. Toss cubed sweet potatoes with oil, salt, pepper and garlic powder.
  3. Spread evenly on a baking sheet and roast for 20 minutes, flipping halfway through.
  4. While potatoes roast, heat a skillet over medium-high heat and brown the ground beef for 6-7 minutes.
  5. Add taco seasoning and optional water to the beef, stirring to coat.
  6. Divide roasted sweet potatoes into four bowls. Top with beef and a scoop of cottage cheese.
  7. Add avocado, hot honey, and desired toppings before serving.

Notes

  • The air fryer can be used for the sweet potatoes at 400’F for 12-15 minutes.
  • Store toppings separately for meal prep to maintain freshness.
