Ingredients

2 medium/large sweet potato (cubed)
2 teaspoon olive or avocado oil
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
1 pound lean ground beef (90/10)
2–3 Tablespoons taco seasoning
2 Tablespoons water (optional)
1 cup cottage cheese
1 avocado (chopped)
4 teaspoons hot honey
hot sauce to taste
pickled onions or jalapeños
Instructions
- Preheat the oven to 400’F.
- Toss cubed sweet potatoes with oil, salt, pepper and garlic powder.
- Spread evenly on a baking sheet and roast for 20 minutes, flipping halfway through.
- While potatoes roast, heat a skillet over medium-high heat and brown the ground beef for 6-7 minutes.
- Add taco seasoning and optional water to the beef, stirring to coat.
- Divide roasted sweet potatoes into four bowls. Top with beef and a scoop of cottage cheese.
- Add avocado, hot honey, and desired toppings before serving.
Notes
- The air fryer can be used for the sweet potatoes at 400’F for 12-15 minutes.
- Store toppings separately for meal prep to maintain freshness.
