Instructions
- Preheat oven to 350 degrees F. Line a loaf pan with parchment paper and grease lightly.
- In a large bowl, mix together the bananas, eggs, cottage cheese, maple syrup, and vanilla until smooth.
- Stir in the almond flour, baking soda, and cinnamon until fully combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50 minutes. Cover with foil after 30 minutes if the top browns too quickly.
- Test with a toothpick for doneness and let cool completely before slicing.

- For a smoother texture, blend the wet ingredients in a blender before adding the flour.
