3 chicken breasts (tenderized)
2 tsp olive oil
salt, garlic powder, onion powder + Italian herb blend
1/2 heaping cup marinara sauce (divided)
1/2 heaping cup cottage cheese (divided)
4 oz freshly grated parmesan (divided)

Instructions

  1. Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Place chicken on the baking sheet, coat with olive oil, and season both sides with salt, garlic powder, onion powder, and Italian herbs.
  3. Bake for 15 minutes or until internal temperature reaches 165 degrees F.
  4. Remove from oven and top each breast with marinara, 3 tbsp cottage cheese, and grated parmesan.
  5. Bake for an additional 5-7 minutes until cheese is melted and bubbly.

Notes

  • Pulse cottage cheese in a blender for a smoother texture.
  • Use small curd cottage cheese for the best melting results.
