An easy, delicious baked chicken breast stuffed with a creamy broccoli and cheddar cheese mixture, seasoned with cajun spices for a flavorful and healthy dinner.

4 small chicken breasts
¾ cup broccoli (chopped)
½ cup shredded cheddar cheese
2 ounces cream cheese (softened)
2 teaspoons cajun seasoning

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a small bowl, combine the broccoli, cheddar cheese, and softened cream cheese. Set aside.
  3. Slice each chicken breast lengthwise so that the breast folds open (be sure not to slice all the way through).
  4. Spread the broccoli cheddar mixture on one side of the chicken and fold the other side over. Secure the chicken with a toothpick.
  5. Lightly sprinkle the cajun seasoning on each side of the chicken.
  6. Place in a greased baking dish. Bake for 25-30 minutes, until the chicken is cooked through.

  • Let chicken rest for 5 minutes before serving to keep it juicy.
  • Use a meat thermometer to ensure internal temperature reaches 165°F.
  • You can use fresh or thawed frozen broccoli. Pat it dry first.
